چکیده

Fungi associated with the pre and post-harvest fungal soft-rot diseases of ripe fruit of soursop (Annona muricata) and their effect on the nutrient composition of the fruit pulp were investigated. The fungal pathogens implicated in the soft-rot diseases of the fruit were Colletotrichium gloeosporoids, Rhizopus stolonifer and Aspergillus niger. There was a relative decrease in the carbohydrates, protein, fiber, fat and vitamin A and C contents of the infected fruits, while the ash, moisture and the mineral contents were relatively higher in the infected fruit studied. However, the nutrient compositions between the infected and the apparently healthy fruit were not significantly different (P>0.05).
